EAT MORE VEGETABLES

I'm certainly taking advantage of all the delcious Spring vegetables. Here is my ratatouille...

What to do with this lovely butternut squash?

...and some Camargue red rice?

Stuffed butternut squash, with spinach, feta and sunflower seeds. Baked in the oven. So sweet and tasty. One of my favourites!

Spring feet are happy feet :)
